WINEMAKING: Fermentation in temperature-controlled stainless steel tanks, pre-fermentation cold maceration (6°C) for 8-10 days, racking and punching down, long maceration of more than 30 days. Malolactic fermentation in new barrels.
AGEING : Aged on lees in new 100% barrels for 16 months.
Enjoy with hearty and robust dishes (roast lamb, rib of beef, duck breast), and with age, a preference for game. Pairs well with strong cow's milk cheeses.
