NAME: AOC Côtes du Marmandais
GRAPE VARIETY : 50% Merlot, 20% Cabernet Sauvignon, 20% Malbec, 10% Syrah
HARVEST:
AGEING : The Merlot, Malbec, and Syrah (aged together) are aged for 18 months in demi-muids, while the Cabernet Sauvignon is aged for 24 months in oak barrels. The wine is then left to settle for 6 months before bottling.
TERROIR: The Merlot, Syrah, and Cabernet Sauvignon grapes come from vines around thirty years old, rooted in clay-gravel soil over a subsoil of grey marl molasse. The Malbec grapes come from a slightly younger plot, also clay-gravel, but with a subsoil of blue marl.
Chante Coucou is a wine meant for aging. If drunk young, it is advisable to decant it so that it can open up and express itself.
It will pair well with dishes in sauce.
