Manuel Olivier – Hautes Côtes de Nuits – Red – 2018

This regional appellation is geographically situated above the most famous Grands Crus of the Côte de Nuits. A maceration of about fifteen days, followed by aging in half tanks to preserve the fruitiness and half barrels to stabilize the tannins, gives this cuvée structure and harmony. Its balance allows for versatility in pairing with other wines.

NAME: AOC Hautes Côtes de Nuits
GRAPE VARIETY: 100% Pinot Noir
WINEMAKING: The grapes are completely destemmed. Cold maceration for one week, using indigenous yeasts. Fermentation for 15 days at 30°C with frequent punch-downs and a warmer temperature at the end.
AGING: 9 months on fine worked lees, 50% in vat, 50% in oak barrels over 3 years old.
TERROIR: Located 1km from Clos de Vougeot, on gently sloping hillsides, facing east-southeast at an altitude of 350m. Clay-limestone soil with a shallow, stony structure (50%)

Serving temperature: 14-16°C

Aging potential: 5 to 6 years

It will complement your grilled or roasted red meats and poultry.
