Manuel Olivier – Hautes Côtes de Nuits – White Chardonnay – 2022

This cuvée is produced using two different aging methods: half in tanks to preserve the typicity of the Chardonnay grape (fruity and floral elegance). The other half ferments directly in oak barrels, 15% of which are new; the wine is stirred on its lees. Aging on the lees for approximately 16 months adds breadth, structure, and terroir.

WINEMAKING: Fermentation carried out for 50 % in barrels (including 15% in new barrels) and 50 % in stainless steel tanks, at a temperature of 18-19 °C
AGEING : Half of it is aged in tanks on fine lees worked for 16 months, the other half remains in its fermentation barrels where the wine is "stirred" (bâtonné).«
TERROIR: Located 1km from Clos de Vougeot, on gently sloping hillsides, facing east-southeast at an altitude of 350m. Clay-limestone soil with a shallow, stony structure (50%)

Serving temperature: 12-14°C

Aging potential: 2 to 7 years

It pairs well with fish and poultry cooked in butter and cream, as well as with fatty cheeses.
