Located in the South of France, in the Northeast of the Faugères AOC, in the heart of the Languedoc region, Domaine Ollier-Taillefer is a family estate. It is run by Luc and Françoise Ollier, brother and sister, the 5th generation of winemakers born in the area and now responsible for these 36 hectares of vineyards in the Faugères AOC zone, which have now been converted to organic farming. In September 2009, the family begins the conversion of the ENTIRE vineyard into Organic Farming (AB). September 2012, They have obtained organic certification (for both wine and vineyards). After 10 years of sustainable farming practices, this is the logical next step. A great wine at a very affordable price!

GRAPE VARIETY : Syrah, Grenache, Mourvèdre, Carignan
WINEMAKING: The harvest is done manually. It is carefully sorted before arriving at the cellar. Aware of the fragility of this schistous terroir, we have chosen to respect it by working as naturally as possible.

AGEING : The aging process is discreet – 12 months in 225-litre French oak barrels with only 10% of new wood – but it adds an extra touch of soul.
TERROIR: Blend of old vines on a schistous terroir at 350m altitude.

Pair it when young (4/5 years) with a nice rib of beef, wild boar stew, cassoulet, and when older (6/10 years) with game birds…
