WINEMAKING: The harvest is done manually. It is carefully sorted before arriving at the cellar. Aware of the fragility of this schistous terroir, we have chosen to respect it by working as naturally as possible.
AGEING : The aging process is discreet – 12 months in 225-litre French oak barrels with only 10% of new wood – but it adds an extra touch of soul.
TERROIR: Blend of old vines on a schistous terroir at 350m altitude.
Pair it when young (4/5 years) with a nice rib of beef, wild boar stew, cassoulet, and when older (6/10 years) with game birds…
