WINEMAKING:The grapes are destemmed before a 48-hour cold pre-fermentation maceration. This is followed by traditional alcoholic fermentation at 25°C in temperature-controlled stainless steel tanks with daily pump-overs. Maceration then lasts approximately fifteen days.
