Crème de Cassis – Domaine Chermette

The Noir de Bourgogne blackcurrant is a variety that produces small, highly concentrated berries with a particularly strong flavor. It differs from the common blackcurrants with large berries that are often imported and then frozen.
The blackcurrants are harvested in July. The cream is released in early September. The younger it is, the more its aromas explode.

Crème de cassis can be enjoyed as an aperitif paired with white wine, crémant, or champagne, or simply on its own as a digestif. In cooking, it can be used to deglaze duck breast jus or on desserts made with red berries or vanilla ice cream.
