WINEMAKING: The grapes are harvested only in the morning to take advantage of the lower temperatures and preserve maximum aromatic freshness. This is followed by pneumatic pressing and then cold static settling at a temperature below 10°C for 36 hours. Alcoholic fermentation takes place in stainless steel tanks at 18-20°C.
AGEING : on fine lees
TERROIR: clay-gravel soils on clay-sand subsoils
Serving temperature between 8 and 10°C
