COLOUR : aged gold with copper highlights.
NOSE : generous, opening on aromas of almond paste, candied chestnut, candied orange and raisins. It quickly develops headier notes of vanilla and flowers, releasing almost tropical notes of mirabelle plum and honey, accompanied by spices (cinnamon, clove, bay leaf).
PALATE : creamy, spicier and peppier than the nose while retaining citrus and stone-fruit notes, with a hint of ginger and mellow oak.
FINISH: Long, creamy and spicy with notes of hazelnut and oak.

DISTILLATION: Charentais pot still. Double distillation, with wine lees retained.
AGEING : French oak casks from the Limousin or Allier forests.
PRODUCTION : cold filtration, reduced to 40% ABV
Delicate and intensely fruity, this VS can be enjoyed neat or in cocktails, where it shines surprisingly well.
Pairs beautifully with oily smoked fish such as salmon or trout.
