This red wine is a selection of the oldest Grenache vines in the commune. Nearly 60 years old, they grow on terraced or terraced plots on an extremely stony terroir of rolled pebbles and limestone sandstone, baked and rebaked by volcanic periods. This cuvée highlights the exceptional quality of very old, authentic, and noble Languedoc vines on a select terroir: "Montée des Grès".

DRESS : very firm sweet cherry of remarkable density, even viscosity

NOSE : Small red fruits, blackberries, blackcurrants with delicate kirsch notes. Pepper and garrigue are also present. Licorice and wood are also present.

MOUTH : Tannic and exceptionally concentrated, fleshy, perfectly harmonious

NAME: AOC Pézenas
GRAPE VARIETY : 90% Grenache, 10% Counoise
VINFICATION: harvesting of overripe grapes after a drying period of almost 2 months on the vine and several months of alcoholic fermentation (starting in stainless steel tanks and finishing in new barrels with lees stirring for almost a year) leaving at the end of the natural biological process, without yeast, some residual sugars.

Serving temperature: 18°C – 20°C. Decant before serving.
Aging potential: 8 to 10 years

This vintage will pair well with your red meats, herb-crusted lamb chops, and festive dishes such as stews and duck breast.
