Raw Sidre – Eric Bordelet

This vintage is a dry cider, very expressive, both lively and refreshing, with subtle tart notes. Highly thirst-quenching, this dry cider has an alcohol content of only 5.5%.

Brut Cider is made from 20 different apple varieties, including sweet, bitter, and sour. The apples are harvested by hand and then left to dry for several weeks. They are then blended, coarsely crushed, and gently pressed. The traditional natural fermentation takes place in vats or barrels and bottles over several weeks, with varying amounts of residual natural sugars (fructose), thus without chaptalization (the addition of sucrose).

Eric Bordelet's estate is located in southern Normandy, on the Armorican massif, extending from Domfrontais to the borders of Mayenne and Orne.
