AGEING : Aged for 12 months in large oak casks and Burgundy barrels, French oak, very lightly toasted, one-year-old barrels. Each grape variety is aged separately, and the wine is neither filtered nor fined.
TERROIR For Syrah and Grenache, the terroir is primarily limestone covered with rolled pebbles on the hills near the Arboussas massif. For Mourvèdre, the landscape is one of terraces, silty-clay-sandy soils, a warm climate during the day, and in the evening, the high relief of the Larzac plateau brings coolness.
For the Carignan: old vines over 30 years old on the sloping terroir of La Seranne, foothills of the Larzac.
