Clairin Casimir – Haiti – 49.5%

Faubert Casimir continues the work begun by his father, Duncan, in 1979. In Barradères, Haiti, he cultivates 50 hectares of soft, non-hybrid Hawaiian white and red sugarcane. Each cane is harvested only when fully ripe. Following tradition, he adds lemongrass leaves, cinnamon, and, for certain batches, ginger to the fermenting pure cane sugar. This Clairin wonderfully balances classicism and unbridled exuberance.
