Brut de Rose – Les Hauts de Talmont

A vintage, single-varietal sparkling wine made from our Merlot grapes using the traditional method employed by Champagne winemakers: special bottling, the addition of a tirage liqueur to initiate a second fermentation in the bottle, the prise de mousse (sparkling wine production); capping, then aging on lees for 13 months in the chalk cellars of Maison Lateyron in Montagne-Saint-Émilion, at a constant temperature of 12°C. Riddling prepares the wine for disgorging, the removal of the lees. No sugar has been added at this stage (0% dosage). Corking, wire-hooding, and labeling complete this traditional method. Its rose petal color is reminiscent of rosé Merlot, with a nose dominated by aromas of raspberry and blackberry.
