NOSE : This Saint-James rum reveals hints of wood – mushroom, dry wood – intertwined with roasted notes – burnt wood, toasted/grilled – linked to the charring of the barrels. These are followed, discreetly, by notes of nutmeg and fruit in brandy.
MOUTH : On the palate, tannins and wood dominate, with notes of dry/burnt wood enveloping the entire mouth.
FINAL: The finish of this 15-year-old Saint-James rum offers a powerful aromatic profile that lingers beautifully. This is enhanced and supported by various woody notes that evolve from undergrowth to drier aromas – fern, boxwood – becoming increasingly dominant.
