This vintage cider is a 2021 brut with an alcohol content of 6%. The apples come from century-old trees and are hand-picked. Éric Bordelet incorporates his oenological knowledge into his ciders to achieve subtle nuances.
The apples are coarsely crushed and gently pressed. The traditional natural fermentation takes place in vats or barrels and then in bottles over several weeks, with varying amounts of residual natural sugars (fructose), thus without chaptalization (the addition of sucrose). This cider combines lightness, tangy notes, and a complex character with lemony aromas and a hint of spice. Its versatility allows it to be enjoyed chilled today but also to age gracefully.
Eric Bordelet's estate is located in southern Normandy, on the Armorican massif, extending from Domfrontais to the borders of Mayenne and Orne.
