VINIFICATION : <\/strong>50% de la vendange enti\u00e8re est plac\u00e9e en fond de cuve, les 50% restants sont \u00e9grapp\u00e9s et viennent compl\u00e9ter la cuve. Mac\u00e9ration \u00e0 froid d\u2019une semaine, levures indig\u00e8nes, cuvaison de 5 \u00e0 6 semaines \u00e0 30\u00b0C. Pigeages et remontages selon r\u00e9sultat des d\u00e9gustations quotidiennes.
ELEVAGE : <\/strong>18 mois sur lies fines travaill\u00e9es en f\u00fbts de ch\u00eane (30% f\u00fbts neufs, 30% f\u00fbts d\u20191 vin, 30% f\u00fbts de plus de 3 ans). F\u00fbts de 36 mois de s\u00e9chage dont le bois est issu de ch\u00eane d\u2019Allier et des Vosges. Chauffes l\u00e9g\u00e8res, lentes et longues en profondeur du bois.\u00a0Soutirage et mise en bouteille par gravit\u00e9.
TERROIR :<\/strong>\u00a0situ\u00e9e au c\u0153ur du village en pied de coteau, exposition plein Est au\u00a0lieu-dit \u00abLa Brunelle\u00bb, \u00e0 260 m d\u2019altitude. Sol argilo-calcaire \u00e0 tendance ferreuse d\u2019une profondeur d\u2019environ 50 cm, caillouteux et drainant.<\/p>\n
